Convection technology

Though both oven types look similar, convection range technology uses a fan and exhaust system to circulate hot air, while a conventional oven generates heat from the bottom up.

Cooking modes

Both conventional and convection ovens have familiar cooking modes like baking, roasting and broiling, but convection ovens often come with additional cooking modes like air fry and sous vide.

How does an air fryer work?

An air fryer quickly circulates hot air around food to create a crispy crust using little to no oil. Food is placed in a perforated tray or basket to allow excess fat to drip away. While air fryers can be purchased as a standalone countertop appliance, many stoves with convection ovens now include an air fry mode as an additional cooking option.

A convection oven uses a fan and exhaust system to circulate hot air around the food to cook more evenly and efficiently, reducing cooking times and helping to achieve better browning and crisping.

The circulation of hot air helps food cook more evenly, for better browning and improved texture on baked goods. Because hot air is circulated throughout a convection oven instead of radiating from the bottom, you can cook multiple dishes on different racks at the same time without the need to rotate them during cooking.

A convection oven can cook faster than a conventional oven. If your recipe is written for a conventional oven, start checking for doneness a few minutes before the recipe recommends. Check your range's user manual for cooking tips and adjustments.

Due to even heat distribution, you can bake at lower temperatures in a convection oven. Reduce the temperature by 25°F (15°C) for your recipe. For example, if your recipe calls for baking at 375°F, set your convection oven to 350°F.

On Samsung Ranges that feature Convection Bake mode, the Auto Conversion setting will adjust the temperature for you. Set your oven temperature as your recipe suggests and Auto Conversion will lower the temperature by 25°F for convection cooking.

The fan in a convection oven is used to circulate hot air evenly around the oven’s interior. It keeps the oven at a consistent temperature to cook food more evenly and efficiently.

Turn off the oven and let it cool completely before cleaning. Remove racks and accessories and wash them separately with warm, soapy water. Wipe down the interior with a damp cloth or sponge and soapy water. Don’t use abrasive cleansers or scouring pads as they might scratch the oven’s surface. Keep water or cleaning solutions away from heating elements, as this may cause electrical issues. Wipe down the fan with a soft cloth and let it dry completely before reassembling.

Regularly inspect the oven seals, fan and heating elements for any kind of wear. Make sure the vents aren’t blocked by food or other elements.
